Moulin Olivier Morati

Olivier Morati is an olive grower in the Nebbio region. He took over his father's farm, which mainly produced honey, by reviving centuries-old olive trees (Biancaghja variety) and planting 15 hectares of Biancaghja and Frantoio trees to produce a quality, distinctively Corsican (PDO) olive oil from fruit grown using environmentally friendly methods and harvested when ripe, prepared using artisanal methods. In 2012, he won a gold medal at the Concours Général Agricole in Paris. Harvesting is done in the traditional way: from January to May, the precious olives are picked directly into large suspended nets, then pressed in the farm's own mill in a continuous chain; the older trees produce once every two years, the younger ones every year.
